Whilst specialising in Piedmont cuisine I opened some restaurants, the most important being ‘L Birichin’ in Turin, which I now currently manage alongside The Egg, which opened in March 2014. In 2006 I was selected as the official chef for the Winter Olympics in Turin. In 2008 and 2012 Nike chose me for the Olympic Games in Beijing and London. In the same year I also received a Michelin Star, a renowned international award; I went on to refuse a further Michelin star in 2008.
Recently, I participated at the EXPO Milan with The Egg in the Pavilion of Biodiversity. I have been nominated to manage food and beverages for the next Olympic Games in Rio de Janeiro in 2016.
